1/2 Lemon
1 Cup filtered water
1 Gala Apple
3 Oz Baby Mixed Greens
1/2 cup walnuts
3-4 dates pitted and sliced
Goat’s Cheese
Black Pepper
Vanilla Fig Balsamic Vinegar by Leonardo e Roberto’s Gourmet Blends

I love combining salty and sweet ingredients in my salads. It was dinner time and I wanted to do something different. SO, as I often do, I pulled what I had on hand out of the fridge and came up with this delicious recipe.

First, create your lemon water. Combine water and the fresh squeezed lemon juice into a regular sized bowl. Next, slice the apple and submerge the segments in the lemon water, this prevents the apple from turning brown. When you remove them let the apple slices dry on a fresh paper towel. Then fill a serving platter with mixed baby greens and arrange the apples on the outside of the dish around the lettuce.

Drizzle a generous amount of vanilla fig balsamic vinegar by Leonardo e Roberto’s Gourmet Blends. Then you want to place large pieces of goat’s cheese atop the lettuces. Toss the walnuts on top then add generous amounts of goat’s cheese. Pit and slice the dates and plate the segments right on top. Hit it with some fresh ground black pepper and serve.

This salad is fresh and light but also wintery and flavorful so it is perfect for the holiday table.
