Flat Leaf Parsley Fresh Mint leaves Chunks of Feta Cheese Sugar Plum Tomatoes (sliced in half) Gourmet Blends Original Balsamic Vinegar Sprinkle of Black Pepper
This recipe was an accident and a prime example of making use of what I have to enjoy meals AND not waste food.
I was looking in the fridge and really wanted a feta cheese topped salad but I didn’t have any lettuce. So instead I used what I had on hand which was fresh flat (Italian) parsley- apparently very high in lycopene and also apparently good for our bodies- and fresh mint leaves.
Then I noticed I had some sugar plum tomatoes so I sliced those in half and tossed them on top. I threw on some good sized chunks of feta cheese and then drizzled with Gourmet Blends Original Balsamic Vinegar and added a touch a fresh black pepper.
It was so surprisingly delicious my husband said “you must officially put this into your Katrina’s Kitchen recipes.” I love happy delicious accidents.
