Yoga Bunny- a lettuce free salad

There is a lovely young lady staying with me for the summer to intern at my sweetie’s law firm. She’s been quite pleasant to have around. Her brain works overtime without effort, her soul is older than her years, and her palate is irregularly choosey. My sweet house guest loves yoga, and hates lettuce- two things one could usually assume go well together.

I affectionately tease her… “you are afraid of lettuce, you have a phobia of leaves, you are convinced you will turn green like Elphaba in Wicked.” She smiles and laughs as we DIY ourselves through the evening.

My little Yoga Bunny has to eat though, and sending her back home after two months without finding ways to properly feed her in the interim is not an option.

Hence, the “Yoga Bunny” a lettuce free salad.

 

1 cup sugar snap peas, chopped
1/2 red bell pepper, chopped
1/4 red onion, chopped
1 tomato, cleaned and drained,
Alternatively 1 cup sugar plum tomatoes
1 avocado, cleaned and chopped
1 Persian Cucumber – leave skin on and cut into small cubes
1 tangerine/mandarin, peel and separate segments
Olive Oil
Balsamic Vinegar
Black pepper
Feta Cheese
Toss
