Ingredients:
15 oz. Organic Great Northern White Bean (1 can- organic)
1-2 TBSP Tahini
2 Fresh Lemons (squeezed)
1/4 TSP White Pepper
Fresh Garlic (3-4 cloves)
Red Pepper (Cayenne) a few pinches
Paprika
Olive Oil

I think of this dish as an alternative to hummus, and it’s based on my Grandma’s Hummus recipe using a Great Northern White Bean in lieu of garbanzo beans. Since there are only two of us in my house for dinner I made a half batch. You can double the ingredients and make a bigger batch if you have more people or want some leftover.

For the simplest preparation, and a quality choice, pick up a can of the Organic Great Northern white beans at Trader Joe’s, a la Semi-Homemade like Sandra Lee. Rinse them and drain the excess water.

Combine all of the beans, tahini, lemon juice, garlic, white pepper and cayenne pepper right into the electric mixer or food processor. Use a garlic press for the fresh garlic. Also keep in mind I season with pepper and lemon juice to taste, so if it needs more just add more. Give it a good blend until it has a smooth texture.

Plate it in a small bowl, sprinkle with paprika and top with a drizzle of olive oil. You can serve with raw veggies like carrots and sliced bell peppers as a dip, stuff into an avocado and top it off with a little goat’s cheese, scoop it into a salad, or serve as a side dish. It keeps well in the fridge for a few days too so if you have leftovers save it for tomorrow’s healthy lunch!
