Ingredients:

Kidney Beans 15 oz Can
3 TBSP Red Onion finely chopped
3-4 TBSP Italian Parsley (fresh) AKA Flat Leaf Parsley
2 TBSP Olive Oil
1/2 TSP Black Pepper
1 Lemon

Sometimes you just a want an easy side dish. This quickie bean salad is exactly what it sounds like- quick! I wanted to add something more to the table without drama. A pantry search revealed a can of kidney beans. Now, I know what you are thinking. You have heard me say I don’t eat canned foods. But there are always exceptions to the rule. If it is a quality food item and not processed I will use it, and beans are one of the times I will eat from a can.

Trader Joe’s has a great selection of organic canned beans packed in sea salt!

So, here we go. Open one can of kidney beans, and give them a good rinse in a strainer. Chop some red onion- approximately three tablespoons, fresh squeezed juice from one lemon, chopped fresh flat leaf parsley, olive oil and black pepper. Toss it all together in a large bowl and there you go. It is so simple and delicious, it’s become a favorite at our dinner table.
