Ingredients:

3 TBSP Red Onion, Finely Chopped
3-4 Strawberries, Washed and Chopped
1 Large Yellow Peach, Washed and Cut Into Small Cubes
1 Small Jalapeño, Chopped- Approximately 1-2 TBSP
3-4 TBSP Fresh Cilantro, Rough Chop
1-2 Fresh Limes
1 -2 Avocados

Having recently visited Mexico I am feeling quite inspired by the spicy fresh flavors and ingredients. After returning home from this last trip to Cabo I decided to make some guacamole. The next day I realized I had plenty of the ingredients left over, but instead of making more guacamole I wanted to be adventurous and creative. Still being peach season, I have a tray of fresh peaches sitting on the counter. Letting any go to waste is a big no-no. I made up my mind that peach salsa wouldn’t be so different from mango salsa and the inspiration was born.

First wash and dry all the ingredients. Next, cut, clean, chop and assemble.

Take one fresh jalapeño and some red onion. Make sure they are finely chopped. Cut the peach and strawberry into small cubes. Roughly chop the cilantro. Put it all into a medium bowl. Squeeze the juice from 1-2 fresh limes, then give it all a stir.

Reminder: the ingredient measurements here are an approximation. If you want to add a little more or less of one of the elements go ahead and modify or prepare by eyeing it instead of using a measuring spoon!! After all, cooking should be fun.

I chose to stuff my peach strawberry salsa into an avocado. It is a fresh and healthy side dish perfect for a hot day since there’s no cooking necessary, only combining some ingredients straight from the fridge. You can even use it like a tomato salsa or a pico de gallo and eat it with tortilla chips. Yum!
