Fresh Royal Medjool Dates

This recipe is really so easy and so healthy it almost makes me feel guilty, even though it is guilt-free, and remember I said ALMOST!

Start by washing and drying your fresh peach(es). Cut the peach in half and remove the pit.

Next, wash and dry your fresh dates. I prefer Royal Medjool dates because they are my favorite, but really any dates you can get your hands on will work well. Yes, dates seem so exotic, but they are now available at places like Costco and Trader Joe’s, and I even see them at the regular supermarkets from time to time as well.
Remove the pits from the dates, then chop them up. I use roughly one to one and a half dates per each half peach.

Take parchment paper (not wax paper) and cut it so each large square can each fit and surround one half peach. Place the peach inside the parchment paper and then place into the hole of a cupcake tin. If the cupcake tin is too small you can use any oven safe cookware or small pyrex container as long as the peaches are each contained individually.

Stuff the top of the peach with dates, and bake on 350 for 30-35 minutes on the lower oven rack.

Once done baking remove from the oven and let it cool for at least 10 minutes. If you want to refrigerate and save for later these baked peaches re-heat well and also taste great cold.
